Sweet Potato And Ham Scruffin Bites

Do you want to know how to make the most scrumptious sweet potato and ham scruffin bites? Strap in for one of the most simplistic, yet rewarding recipes you can enjoy this weekend.

Ingredients:
• 2 cups plain flour, plus extra for dusting
• 3 tsp baking powder
• 1 tsp caster sugar
• 1 1/4 cups cooked mashed gold sweet potatoes
• 1/4 cup light extra virgin olive oil
• 1/3 cup milk
• 1 egg, lightly beaten
• 200g sliced triple-smoked ham
• 2/3 cup grated tasty cheese
• Olive oil spray
• 6 cherry tomatoes, quartered
• 50g of feta, crumbled, plus extra to serve
• Small fresh basil leaves, to serve

Steps:
1 Preheat the oven to 200C. Grease a 12-hole (1/3-cup capacity) muffin pan.

2 Combine flour, baking powder and sugar in a large bowl. Make a well. Whisk sweet potato, oil, milk and egg in a separate bowl. Add potato mixture to flour mixture. Stir to combine. Turn out onto a floured surface. Gently press out to form a 25cm x 35cm (about 1cm-thick) rectangle.

3 Top dough with ham. Sprinkle it with tasty cheese. Working from 1 long side, roll up dough to enclose filling. Cut into 12 slices. Place one slice, cut-side up, in each prepared hole. Top with tomato and feta. Spray with oil. Bake for 20 minutes or until lightly golden. Cool in pan for 2 minutes.

4 Sprinkle it with extra feta and basil. Serve warm or at room temperature.

Fried Rice

10 Minute Fried Fice Recipe:

Learn how to make the most exquisite fried rice in only 10 minutes.

Ingredients:
• 1 tbsp peanut oil
• 250g pork mince
• 2 garlic cloves
• 1 long fresh red chilli
• 1 1/2 tbsp kecap manis
• 450g pkt microwave jasmine rice
• 110g (2/3 cup) frozen peas
• 2 eggs
• 1 tbsp light soy sauce
• 1 tbsp sweet chilli sauce
• 1/2 cup fresh basil leaves
• Fried shallots, to serve

Steps:
1 Heat the oil in a wok over high heat. Add the pork and cook, stirring frequently for 3 minutes until brown.

2 While the pork is cooking, chop garlic and chilli.

3 Push the pork to 1 side of the wok and add the garlic to the empty side. Cook garlic, stirring, for 30 seconds then toss into the pork. Add 1/2 tablespoon kecap manis and stir to combine. Cook, stirring, for 30 seconds or until caramelised.

After 10 minutes of easy preparation and cooking it’s time to enjoy.
